Trong ngành công nghiệp cà phê, vỏ quả là một nguồn phế phẩm lớn cần được tái sử dụng để tăng giá trị kinh tế và giảm ô nhiễm môi trường. Đề tài tiến hành nghiên cứu các thành phần hóa học có trong vỏ quả cà phê Coffea canephora thu tại Gia Lai nhằm cung cấp thêm thông tin để có thể sử dụng nguyên liệu này làm ra các sản phẩm ứng dụng. Kết quả nghiên cứu hoạt tính chống oxi hóa cho thấy, dịch chiết ethanol 50% vỏ quả cà phê thể hiện hoạt tính chống oxy hóa trên mô hình càn quét gốc tự do DPPH mạnh hơn so với dịch chiết ethanol 96% và 70%. Sử dụng các phương pháp chiết xuất, phân lập, tinh chế, đề tài đã phân lập được năm hợp chất (1-5). Cấu trúc hóa học của các hợp chất này được xác định là β-sitosterol, ethyl caffeat, caffein, daucosterol và (+)-catechin dựa trên các dữ liệu hóa lý, phổ cộng hưởng từ hạt nhân NMR và phổ khối MS. Kết quả nghiên cứu là tiền đề cho các nghiên cứu trong tương lai để đánh giá tác dụng sinh học của vỏ quả cà phê.
